Our first reaction is that it is a small carcass, however when you run it over the scale it really weighs up. The meat to bone ratio is very good. We have purchased some for our own use and have found the meat from the Speckle Park to be very tender and good flavour. The customers that we have sold Speckle Park to have been pleased as well. A return customer is a happy customer.

We have always been very pleased with the Speckle Park carcass.
